Should a Church be run by a Team of equal Elders or a Team of Elders where one or two have the responsibility as Pastors?

If all are equal then it's like a committee without a chairman. In practice you have to have someone 'in charge', however nominally.

There are lots of ways in which a plural eldership could be organised, and I'm not sure that any one way is better than another.

Paul appointed people to be pastors in churches, he also appointed elders/deacons to church to help run each church.
The church I attend has a minister who is the chairman of the elders. He is in charge but delegates responcibilities to the elders for different aspects of church life andto be responcible spiritualy for a section of the church. ie, if I have a spiritual problem I don't run to the patorbut to my 'elder'.
We have a group of deacons who look after the fabric of the church.

It is a sharing of responcibility and a spreading of the load, but ultimatly the pastor has been called to minister and he is the one who is answerable to God.
